Tuna Salad with Herbs de Provence

This is a recipe for tuna salad that I came up with on the fly a couple years ago. My kids loved it and are always excited when I tell them we’re having this for dinner. We eat it with crackers or on sandwiches or directly from the bowl lol.

I wanted to make a quick meal for the family with what I had in the kitchen.  I typically have some form of onion and celery available as well as oils and lemon juice or vinegar to make salad dressing in the kitchen.  I think red onion goes very well with tuna so I grabbed on of those. I had some Herbs De Provence that I had used in something recently and thought that would combine well with the tuna as well.  I almost used lemon juice for the acid taste in the dressing but I though I’d switch things up a bit by using white wine vinegar instead. To finish it off I added some fresh ground black pepper and sea salt.

At this point I probably need to mention the fact that I typically don’t measure anything if I m just throwing it together so all of the measurements in the recipe are estimates.

We will often just eat this on crackers if we’re pressed for time but if we’re not in a hurry I like to serve this on whole wheat bread with a nice slice of Swiss cheese lightly toasted with a couple slices of tomato to finish it off.

Tuna Salad with Herbs de Provence

  • Servings: 1-2
  • Difficulty: easy

1 can tuna in water
1 tbsp celery chopped
1 tbsp red onion chopped
1 tsp Herbs de Provence
1 tbsp white wine vinegar
1 tbsp extra virgin olive oil
salt and pepper to taste

Combine all ingredients. Adjust seasonings to taste. This recipe can easily be doubled or quadrupled. Serve with crackers or on toasted bread with a slice of Swiss cheese.
